豆角炒蛋:

材料:
豆角4兩
雞蛋4隻

處理:
1. 豆角切去兩端,切細粒,沖洗乾淨。
2. 煲滾1鑊水,放少許油及少許鹽,放豆角粒落鑊,灼2分鐘。
3. 豆角擎乾水。
4. 打勻雞蛋,加少許鮑魚汁。
5. 放豆角粒入蛋漿內。

烹調:
1. 放1湯匙油落鑊,中火燒熱。
2. 放豆角粒及蛋漿落鑊。
3. 向四面推,反一反蛋。
4. 再煎1分鐘,上碟。

Scrambled eggs with green string beans:

Ingredients:
Green string beans 4 taels
Eggs 4 No.

Preparation:
1. Cut both ends of green string beans, then dice into small cubes. Rinse bean cubes thoroughly.
2. Boil up a wok of water at high flame, put little oil and salt, then the bean cubes, cook for 2 minutes.
3. Hang dry bean cubes.
4. Beat the eggs and mix well with abalone sauce.
5. Put bean cubes into egg syrup.

Steps:
1. Heat up 1 tbsp oil at high flame in wok.
2. Put bean cubes and egg syrup in wok.
3. Push egg syrup to centre of pan, then flip over egg pie.
4. Fry one more minute. Serve.
