Today was supposed to be a 'no-video' day, but a sudden burst of culinary inspiration hit me after a nap. So, I whipped up these Last Minute Chicken Wings on the fly, and boy, did they turn out delicious! Join me as I take you through this impromptu kitchen escapade!

Ingredients:

3 potatoes, peeled and sliced into 1cm pieces
2 large carrots, sliced similarly
1 red onion, chopped into big pieces
Handful of olives, diced
Splash of apple cider vinegar
Pepper, to taste
Oregano and fresh rosemary, to sprinkle
Approximately 1 kg chicken wings
Handful of fresh plum tomatoes, halved
Few leaves of fresh sage

Instructions:

Preheat your oven to 200°C.
On an oven tray, toss together potatoes, carrots, red onion, and olives.
Add a splash of apple cider vinegar, pepper, oregano, and fresh rosemary.
Mix in the chicken wings, ensuring everything is coated in olive oil.
Pop it in the oven for 50 minutes, giving it a stir halfway through.
After 30 minutes, add plum tomatoes and fresh sage for a burst of color and flavor.
Return to the oven for the remaining 20 minutes.
Once cooked, don't forget the finishing touch: a sprinkle of salt (because we almost did!). Serve and enjoy this delightful last-minute creation!
