水蒸蛋糕 /Steamed Cake|樂在其中廚房

材料:
蛋黃糊:
蛋黃3個
植物油25克
牛奶40克
低筋麵粉50克

蛋白霜:
蛋白3個
檸檬汁(或白醋)幾滴
細砂糖30克


Ingredients:
Egg yolk paste:
3 egg yolks
25g Vegetable oil
40g Milk
50g Cake flou

Second, meringue:
3 egg whites
a few drops of lemon juice
30g caster sugar

使用模具:
6吋蛋糕模
直徑15公分
Cake mold size 6”

*蒸蛋糕就是不能讓水蒸氣進入蛋糕體,
不然就會塌陷,是因為蛋糕是靠空氣支撐的,
所以咧~烤蛋糕就沒這問題。
*可以發揮想像力,只要不讓水蒸氣從上面或底部進入蛋糕裡,
家裡的鍋子,拼拼湊湊,蒸出來的蛋糕,幾乎沒什麼問題的。
*鍋蓋必須有孔的玻璃蓋,或錫箔紙上戳兩個洞,
讓裡面的熱空氣可以釋出。
