Learn how to make green tea mochi in under 3 minutes with our easy matcha daifuku recipe. We made a rich matcha chocolate ganache for the mochi filling but feel free to swap this out for a red bean filling which is the classic Japanese-style green tea mochi filling.

🍴Here are the ingredients (for 8 servings) you’ll need:

Green Tea Mochi Dough
130 g (1 cup) glutinous rice flour
200 ml water
25g (2 tbsp) sugar

Matcha Chocolate Mochi Filling
100 g White chocolate chips
20 g unsalted butter
50 ml heavy cream
1/2 tbsp green tea powder

📝 Instead of making a matcha chocolate mochi filling, you can make or buy red bean paste or shiroan to add in instead. We also love adding just cream or strawberry (see our short version here:    • Strawberry Mochi Recipe 🍓 (Ichigo Dai...  )

📝 For the dough we also made a version without adding matcha powder to create more variety in colours and taste. You'll also see in the video that we swap between using ceremonial grade powder for the chocolate filling and culinary grade for the dough. This is just our personal preference to use up some old ceremonial grade powder we have. Our recipe will work with just culinary grade powder too.

📝 If you want a light green colour for the dusting outside, mix a bit of green tea powder into the corn starch. For a stronger colour and taste of matcha, you can also dust this with just pure green tea powder before serving. In terms of taste, we prefer to have a lighter dusting as the raw powder can be a bit bitter-tasting. It’s also more cost-efficient this way too.

📝 The non stick silicone spatula will help you move and flip the chewy daifuku dough more easily between microwaving it and taking the dough out.

📝 A sieve is also optional for matcha mochi making but this helps to give you a more even coating of corn starch and also helps to evenly incorporate the matcha powder. You can also use potato starch instead of corn starch. We prefer using potato starch as it has a finer texture than corn starch.
