Make red bean mochi or azuki mochi in under 3 minutes with our easy Japanese red bean paste daifuku recipe.

🍴Here are the ingredients (for 8 servings) you’ll need:

Red Bean Mochi Dough
- 100 g glutinous rice flour
- 150 ml water
- 25g (2 tbsp) sugar

📝 We don’t use mochiko as this is typically harder to find and more expensive to buy online. However, if you want to use mochiko you can substitute the glutinous rice flour on 1:1 ratio. The texture of the dough may be slightly less stretchy and more doughy but there is no difference in the taste.

Red Bean Paste Mochi Filling
- 250 g dried adzuki beans
- 200 g white sugar
- 25 g brown sugar
- pinch of salt

📝 Most of the time you can find pre made Koshian (https://amzn.to/45Y5EI0) in Asian supermarkets or online which is a finer and softer azuki paste. However, if you prefer little bits inside (this is called Tsubuan), we recommend you make it from scratch. We prefer making our own red bean filling as it’s so much less sweeter with fewer preservatives too.

Filling for Red Bean Mochi Recipe:
Rinse and soak your dried azuki beans overnight.
Drain the water and boil them in 4 cups of water. Reduce the heat and simmer for an hour. Make sure that they are still submerged in the water.
Add the rest of the ingredients and boil until thick. Let this cool and store it in the fridge.

📝 Be creative with your red bean daifuku. We’ve previously made ichigo daifuku in a YouTube Short (URL) but another great filling is to add cold cream or even chocolate ganache.
