Today's snack is a rare cheese cookie sandwich! I added lemon zest to the cookies and freshly squeezed lemon juice to the rare cheese cake to make a refreshing cookie sandwich.
The cookies were crispy when first placed in the sandwich, and the next day the cookies and rare cheesecake blended together to make a moist, very tasty sandwich.
Please eat it with marmalade or jam on top if you like.

▷Ingredients:
■Cheese cookies
100 g unsalted butter
50 g cream cheese
65 g powdered sugar
Pinch of salt
1 lemon zest, grated
40 g whole egg
200 g rice flour
30 g ground almonds
Sugar to taste

■Rare cheese cake
150 g cream cheese
100 g unsweetened yogurt
30 g sugar
1 teaspoon lemon juice
3 g powdered gelatin
20 g water
Jam to taste

▷How to make.
1. Make the cookies. Beat room temperature unsalted butter and cream cheese, add powdered sugar, salt, and lemon zest.
2. Beat an egg and measure out 40g, add to ① and mix.
3. Add rice flour and ground almonds.
4. Roll out the cookie dough to a thickness of 5 mm and refrigerate for 1 hour.
4. Cut 24 cookie dough sheets into 4cm x 5cm pieces. Cut out the center of 12 of the 24 cookies with a small mold. Refrigerate for 15 minutes.
5. Bake in a preheated oven at 170℃ for 13 to 18 minutes while the dough is still cold. Sprinkle with powdered sugar after baking.

6. Make the rare cheese cake. Mix cream cheese, unsweetened yogurt, sugar and lemon juice.
7. Sprinkle gelatin over water to soften and dissolve in hot water. Add to ⑥ and mix.
7. Make a 15cm x 16cm mold, line with a cooking sheet, and fill with the rare cheese cake mixture. Refrigerate for 5 hours.
8. Cut the rare cheese cake into 4cm x 5cm pieces and transfer the cheesecake onto the baked cookies. Place the cheesecake between the molded cookies and top with jam.
