Many plants and trees have edible flowers. The Eastern Redbud tree is one of them. They are one of the first trees to display their beautiful reddish pink flowers every spring. Join me and make this beautiful pink jelly just in time for Easter! Add these yummy little flowers to your cakes and salads, they are beautiful and good for ya!

Did you know that you can use this recipe to make literally any jelly. Just take whatever you want to make a jelly with, like dandelion flowers, make a tea, then make your jelly. Let me know what jellies you all have made.

Like many wild plants there are some medicinal and nutritional uses.
Native Peoples knew and used the redbud tree.
The flowers are 25% protein, contain a significant amount of Vitamin C and are full of antioxidants. They used the roots and the bark in their herbal pharmacy, much like the willow tree and brewed cough and fever-reducing tea from those parts according to books and recipes.
