Join us on our hike through Cloudland Canyon where we show you the West Rim Trail, beautiful waterfalls, and make an amazing homemade Red Bean n' Rice on the trail!
Full recipe for Red Beans n' Rice. Link to video will be tagged in this video at the 4:34 minute mark. Reduce recipe as needed to accommodate amount you will be cooking on trail. I used approximately half of the recipe below.

4Tbls. olive oil
3/4 cup white diced white onion
1/2 cup diced red onion
3/4 cup green bell pepper
3/4 cup diced celery
2 fresh jalapenos diced (optional). Remove seeds if less heat is desired
2 Tbls. minced garlic
1 lb. Andouille Sausage cut into bite size chunks
1/2 to 3/4 lb. smoked ham diced
32 ounces low sodium chicken stock (enough to cover mixture)
4 cans Goya (or other brand) Red Beans
1 small ham hock for seasoning
1 Tbls. dried Thyme
1 tsp. cayenne pepper
3 Tbls. Cajun seasoning
Basmati Rice. Cook per directions on package.

1.) Coat bottom of pot with olive oil over medium low heat. Cook sausage chunks until well browned on each side. Remove from pot.
2.) Put diced ham in pot and cook over medium low heat until a bit of color is formed on ham (5-10minutes). Scrape bottom of pan as moisture release from ham during cooking. The bits left over from browning the sausage add extra flavor. Leave ham in pot.
3.) Place all vegetables in pot with ham. Cook over medium low heat 10 minutes. Season with 1 Tbls. Cajun seasoning. Stir occasionally.
4.) Add beans with juice (if beans have excess juice, drain part of it off). Season with 1 Tbls. Cajun seasoning. Stir often and bring mixture back up to temperature.
5.) Add 32 ounces low sodium chicken stock. You want at least 1" or so of liquid above mixture. Bring to simmer over medium low heat.
6.) Add ham hock and andouille sausage to pot. Simmer over low heat for 1 hour checking/stirring every 15 minutes or so.
7.) Taste first before adding Cajun seasoning.....Add 1 Tbls. dried Thyme, 1 Tbls. Cajun seasoning (if needed), 1 tsp. cayenne pepper (optional if less heat is desired).
8.) Simmer for another 30 minutes or until mixture is reduced and thickened to your liking.
9.) Serve with Basmati Rice (cook rice per package directions).
