Crispy smashburgers, homemade pimento cheese, and crispy bacon make for an explosion of flavor in each bite. Recipes below;
Pimento Cheese

8 oz softened cream cheese 8 oz each of fresh grated smoked gouda, smoked cheddar, pepper jack cheeses
1 tbsp each of garlic and onion powder
1 cup mayo of choice
Cayenne Pepper and Black Pepper to taste

Add grated cheeses to softened cream cheese in a large bowl.
Add additional ingredients and mix well, being sure to break cream cheese up thoroughly.
Add less or more mayo to achieve desired creaminess

Buffalo Sauce

1/2 cup unsalted butter
1 cup Franks Red Hot Sauce
2 tbls white vinegar
1/2 tbls Worcestershire sauce
1/2 tsp cayenne pepper
1/2 tsp minced garlic

Add all ingredients in saucepan. Bring to boil and reduce to simmer for 10 minutes. Remove from heat and let cool

Smash Burgers

I use 1/3 lb. 80/20 ground beef meat balls. 2 patties for each burger.
Create meat balls and let sit at room temp for 30 minutes
Pre-heat griddle to 400-450 degrees.
Add oil to griddle surface.
Place meat balls on griddle Smash thoroughly from edge to edge. The thinner, the better. Make sure all of the patty bottom has been smashed into the hot griddle top.
Season to your liking.
Cook 3-4 minutes per side. You will see juices begin to rise to the top of the patty, indicating that the bottom crust is formed.
Flip and cook 2 more minutes.

Bacon

Place bacon on cool griddle and bring to medium heat. cook to preferred crispness.
