Here's the recipes:

PARFAIT
There's no real recipe here. Just layer your favorite yogurt, granola and berry in a cup, bowl or glass. Add toppings if you like such as maple syrup, nuts or seeds, dried fruit or whatever else you like. Eat right away.



OREO MILKSHAKE
Again, this doesn't really require a recipe. Add your favorite ice cream to a blender and a mix-in. In this case I used oreos, but you could use your favorite cookie, brownie or fruit such as strawberries. Blend until you get the consistency that you like. Add couple of tablespoons of plant milk if the ice cream is not blending.

Top with whipped cream and a cherry (optional). Enjoy.



MICROWAVE CAKE/MUG CAKE


1 teaspoon butter cold + 1 teaspoon butter, melted
.25 cup flour (or gluten-free flour)
1.5 teaspoons cocoa powder
.25 cup sugar (I used raw sugar here)
1/4 teaspoon baking powder
Pinch salt
1 teaspoon egg replacer (optional)
.25 teaspoon vanilla
6 tablespoons plant milk
1 tablespoon chocolate chips (optional)

Use the teaspoon of cold butter to butter the ramekin or mug.

Place the rest of the ingredients into your mug and mix well. Microwave for 50 seconds (for a 1,000 watt microwave) and then test for doneness. It is fully cooked when the top is spongy and it pulls away from the sides of the mug. If it isn’t cooked, microwave 10 seconds at a time until you get the right doneness. Let cool for a couple of minutes before eating. Enjoy.


CHOCOLATE PUDDING

For cooked and non-cooked method:
1-14 ounce package silken tofu
.25 cup cocoa powder
1.5 teaspoons vanilla extract
.25 cup + 2 tablespoons maple syrup

For cooked method:
1.5 teaspoons cornstarch
.25 cup chocolate chips

For the non-cooked method: Place the tofu, cocoa powder, vanilla and maple syrup into a blender and blend until well combined. Spoon into dessert cups or bowls and refrigerate 4 hours (or less if you cannot wait).

For the cooked method: Place the tofu into a blender and quickly blend until creamy. Add all of the ingredients into a small saucepan. Cook on medium heat, stirring frequently. Cook for about 5 minutes, until the chocolate chips have melted and the mixture is hot. Do not allow to burn.

Spoon into cups or bowls and refrigerate for 4 hours or less.

Top with whipped cream, shaved chocolate, more chocolate chips, nuts or whatever you enjoy.


CHERRY PISTACHIO ENERGY BALLS
1.25 cup rolled oats
.5 cup nut butter
.3 cup maple syrup
1 teaspoon vanilla extract
.25 cup dried cherries/cranberries
.25 cup pistachios, chopped

In a bowl mix oats, maple syrup, almond butter, dried cherries, pistachios. Scoop balls using a small cookie scoop and then roll them with your hand until they are tight balls.

You can eat them right away or roll them into a dried fruit/nut mixture or melted chocolate.

NOTE: You can use whatever mix-ins you would like with this recipe. The pistachios and cherries could easily be replaced with raisins and walnuts or almonds and dried apricots or whatever you enjoy.
