STRAWBERRY DESSERT CUPS
makes 8 x 160ml / 6 oz cups

150g (9 pieces) Digestive biscuits (Graham crackers)
30g (2 tablespoons) melted butter unsalted
200g strawberries
250ml (1 cup) whipping cream
1,5 tablespoons sugar
1 teaspoon vanilla extract


CARAMEL AND CHOCOLATE DESSERT CUPS
makes 4 x 160ml cups

1st layer:
100g chocolate biscuits (any brand)
20g unsalted butter melted
100ml whipping cream
1 tsp vanilla bean paste or essence
100g caramel / dulce de lece
100g dark chocolate
200g whipping cream
2 biscuit halves
chocolate sprinkles


VANILLA DESSERT CUPS
makes 4 x 220ml / 8oz cups

200g store bought Madeira cake or plain sponge cake
300ml (1 cup) whipping cream
1 tbsp sugar
1 tsp vanilla bean paste or essence
2 tbsp rainbow sprinkles
For decoration: candied cherries (optional) can be substituted with strawberries or fresh cherries


SIMPLE CHOCOLATE DESSERT CUPS
makes 6 x 160ml / 6oz dessert cups

200g store bought chocolate brownies or chocolate cake or muffins.
400ml (1 1/2 cup) whipping cream
1.5 tbsp (3 tsp) sugar
2 heaping tbsp unsweetened cocoa powder
For decoration: candied cherries, dark chocolate chips.


BLACKCURRANT DESSERT CUPS
makes 6 x 220 ml cups

200g chocolate biscuits
40g unsalted butter melted
250g Mascarpone OR cream cheese
250g whipping cream
3 tbsp sugar
vanilla
chocolate sprinkles or chocolate shavings
glazed cherries


CHOCOLATE DESSERT CUPS:
makes 4 x 165ml / 6 oz cups

150g chocolate biscuits (I have 10 Bourbon biscuits)
30g (2 tablespoons) melted unsalted butter
1 heaping tablespoon custard powder
1 tablespoon sugar
250ml (1 cup) milk
1 tablespoon unsweetened cocoa powder
200ml (3/4 cup + 1 tablespoon) whipping cream
1 tablespoon sugar
1 tablespoon cocoa powder



ORANGE DESSERT CUPS:
makes 3 x 220ml cups

50g (1/4 cup) sugar
40g (1/4 cup) cornstarch
500ml (2 cups) orange juice (fresh or packed)
1/4 tsp turmeric powder
200ml (3/4 cup) whipping cream (minimum 33% fat)
2 tbsp sugar
1 tsp vanilla extract


BLACK FOREST DESSERT CUPS:
makes 5 x 165ml / 6 oz cups

200g chocolate brownies
250g (1 cup) Mascarpone or cream cheese
250ml (1 cup) whipping cream
2 tbsp sugar
1 tsp vanilla extract (optional)
150g (1/2 cup) Morello or sour cherry jam


LEMON DESSERT CUPS
makes 3 x 220ml cups

20g (2 tbsp) cornstarch (corn flour in the UK)
75ml (1/3 cup) water
75ml (1/3 cup) fresh lemon juice (from 2-3 lemons)
100g (1/2 cup) sugar
1 tsp vanilla extract
75g Madeira cake, vanilla cake or vanilla muffins
250ml (1 cup) whipping cream (minimum 33% fat)
1 tsp lemon zest (from 1/2 lemon)


Refrigerate for at least 1 hour before serving.
Store in the fridge for up to 3 days.
