1 whole egg
1 tablespoon red miso paste
Vegetable oil for deep frying

SOUR CREAM & ONION FOAM
200g peeled onions
1 tablespoon olive oil
1 tablespoon unsalted butter
200g sour cream
50g heavy cream
50g whole milk
A pinch of xanthan gum
Salt to taste
Paprika or shichimi togarashi powder
