Jamaican Fried Chicken

3lb Chicken (I used legs & wings)
1 tsp Easispice Jamaican all purpose seasoning
1 tsp johnny’s seasoning salt
½ tsp ginger powder
½ tsp garlic powder
½ tsp allspice
½ tsp lemon pepper (salt free)
1 sprig thyme
1 stalk scallion
1 clove garlic (smashed)
¼ onion (chopped)

Homemade buttermilk:
2 cups whole milk
2 tbl sp vinegar

Chicken Coating/Breading:
2 cups all purpose flour (sifted)
1 tbl sp all purpose seasoning
1 tbl sp johnny’s seasoning salt
1 tsp onion powder
¼ tsp salt

Directions:

Wash the chicken with the juice from a lime/lemon and or vinegar. Drain away all the excess water from the chicken. Pat dry with paper towel if necessary.
In a kitchen bowl, add all the seasoning to the chicken and mix well. Cover tightly and set aside in the refrigerator. Marinate overnight or 24 hours.
Remove seasoned chicken from refrigerator and allow to come to room temperature.
In a large bowl mix together all the seasoning for coating/breading the chicken.
Coat the chicken pieces in the flour mixture, dip into buttermilk, then return to the flour mixture for a second coating then set aside.
Heat oil in a deep fryer to 350 degrees F.
Fry similar pieces of chicken together until the internal temperature is 165 degrees F.
Remove fried chicken and place elevated on a wire rack to cool.
