We made sausage, pepper, onion and cheese omelet on the Blackstone Griddle. Omelets are great on the griddle. If you have not cooked an omelet on the griddle you are missing out.

Cook what ever protein and vegetables you like, then pour the eggs out, cook slow. Add ingredients, fold, and finish cooking. Throw on some garnish and enjoy.
