If you want a showstopper for the holidays (or just a random weeknight you want to impress your family), then this Ratatouille recipe will be sure to do the trick!

This recipe is naturally vegan/plant-based and gluten free. I'm adding a special twist to the top that you have to try!

★Recipe Ingredients★
6 Roma tomatoes , sliced
2 small Zucchinis , sliced
2 small yellow squash , sliced
2 small Japanese eggplant *, sliced(talk about Japanese vs Chinese)
2 small red onions, sliced
1 small yellow onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
6-8 cloves garlic
1 tbsp tomato paste
28oz crushed san Marzano tomatoes
2-4 tsp brown sugar
1 tbsp Balsamic vinegar
2 tsp each basil, oregano, parsley
1/2 tsp each thyme, salt, pepper
1/4 tsp red pepper flakes
2 tbsp olive oil

Optional garlic butter sauce :
1/2 cup vegan plant
6 cloves garlic, minced
1/4 cup vegan parmesan
2 tbsp fresh parsley
1 tsp Italian seasoning
1/2 tsp garlic powder
Salt/pepper to taste
