WRITTEN RECIPE FOR LEMON POPPYSEED MUFFINS
* 1 package Lemon Cake mix
* 1 package 3.4 ox INSTANT Lemon Pudding
* 1 cup water
* 1 cup vegetable oil
* 4 large eggs
Mix all ingredients together with a mixer and beat on medium speed for 3-4 minutes until very fluffy! (Important step to beat 3-4 minutes!)
Add:
2-3 Tablespoons Poppy Seeds
Stir well.
Makes 8 Jumbo Muffins or 12 cupcakes
Or 2 loaf pans 4-1/2” x 8-1/2”
Divide batter.
Bake 350 degrees 15 minutes or until a toothpick comes out clean!
GLAZE:
1-1/2 cups powdered sugar (confectioners)
3 Tablespoons Lemon Juice
Mix until it streams.
Glaze warm muffins.
Allow to cool. Serve
