In today's video I am cooking up a smoked cheese ball, and spoiler alert, it is amazing! Cheese balls always seem to be present at any holiday gathering, and they're always a hit...but a smoked "bbq style" cheese ball beats any other cheese ball I've ever had. They're so easy to make, can be made ahead of time, and you can even freeze them! This cheese ball consists of bacon, jalapenos, green onions, two types of cheese, and of course some of my ash kickin' bbq honey chipotle rub! You're going to want to make this one folks!

Full Recipe:

| Ingredients |

-2 block of cream cheese
-Ash Kickin' BBQ Honey Chipotle
-2 large jalapenos
-3 green onions
- 1lb of thick cut bacon
-2 cups of cheddar cheese
-1/4 cup of pepper jack cheese
-Raspberry Chipotle BBQ sauce
-Sour cream
-Crackers

| Instructions |

Prep:

1. Score and season the cream cheese using my ash kickin' BBQ honey chipotle rub, or the rub of your choice.

2. Chop onions and jalapenos

3. Season bacon with Ash Kickin' BBQ honey chipotle

| Cooking |

1. Set your smoker for 180º F

2. Put the blocks of cream cheese on the smoker, and smoke for one hour.

3. After one hour, remove the cream cheese and let it cool in the fridge.

4. Turn up the smoker and let the bacon cook at 325º F for 30-35 minutes, or until done.

5. Once the bacon is done, chop.

6. Put the two blocks of cream cheese into a bowl, and add 1 cup of cheddar cheese, 1/4 cup of pepper jack cheese, and then add jalapenos, bacon, and green onions, then add 3 big tablespoons of sour cream, and raspberry chipotle bbq sauce to taste. Reserve some of the bacon, jalapenos, and green onions for the outside of the ball. Mix all ingredients together, and from the cheese ball.

7. Once you've formed the smoked cheese ball, wrap in plastic and put into the fridge and let cool for 1-2 hours.

8. After 1-2 hours, remove the smoked cheese ball from the plastic wrap, and coat the entire ball with the reserved cheese, bacon, jalapenos, and green onions.

9. At this point your cheeseball is ready to eat, get a nice variety of crackers, and enjoy!!
