Ingredients (Diana Aw)
1. Sotong 4pcs, clean and slice it but don’t cut through

Thai sauce
1. Calamansi juice 7pcs
2. Garlic 3 cloves
3. Red chilli padi 3pcs
4. Green chilli padi 5pcs
5. Coriander 1 stalk. Separately chopped the leaves and stems.

Seasoning
1. Salt little
2. Sugar 2tbsp
3. Oyster sauce 1tbsp
4. Fish sauce 1tbsp

Method
1. Boil the water and cook the sotong. Once boil, drain it and transfer to a pot of ice water for 2-3min. Then drain and keep in the fridge.
2. Place the chilli padi in the mortar and pound it, followed by garlic. Then add seasoning and mix well. Add in coriander stems and calamansi juice and mix well.
3. Drizzle the sauce onto the sotong and garnish with coriander leaves
4. Serve and enjoy! 💕
