For those of us who crave a good feed of palusami but can't get access to taro leaves.
Sonya's Spinach Palusami
This recipe makes 1.2 kilo of palusami.
Nutritional Value Below Aim to only consume 1/4 cup or 4Tbsp

Ingredients 1:4
4 Bags of Fresh Spinach (300 grams each)
1 litre of Kara Coconut Creme ( 4x cups)
4x large onions grated.
2 tbsp salt to taste

Directions
Pour 3/4 of the coconut creme into a large jug and add grated onions and salt.
(Keep aside 1 cup of coconut creme for after.)
For the miki, mix together coconut creme and grated onions and salt well with a fork.
Pull the base of the spinach, wash leaves and place into large 6 litre crockpot.
Spoon on 1/4 of milk
Add the second layer of spinach and then 1/4 of mixture.
Continue until all spinach and miki is used.
Cook in a large 6 litre crockpot on high for 6 hours. Leave in crockpot until cool to the touch and the spinach has shrunk to less than half the pot. Notice a bit of liquid.
Pour the contents into a sieve and let the liquid seep through. There is no coconut creme in the liquid.
After that place the mixture into a container and add the 1 cup of coconut creme and stir through.
Finally before eating, grill in an open pan in the oven. The mixture kind of 'caramelises.' Do not let it burn.
Serve with fresh cooked taro.

Note: 1 bag of spinach, one cup coconut creme, 1 onion, 1/2 TBSP of salt.
