Chicken Stew with Mushrooms

1 tbsp olive oil
3 tbsp butter
8 bone-in, skin- on chicken thighs*
1 large onion, chopped
16 oz baby bella mushrooms
4-5 garlic cloves, minced
3/4 tsp thyme
1/4 tsp ground bay leaves, or 1 bay leaf
1 tsp salt, or to taste
1/2 tsp pepper, or to taste
3 tbsp flour**
3 cups chicken stock
1/2 heavy whipping cream
3 tbsp chopped parsley, for garnish


*You can use a combination of thighs and drumsticks, I just prefer thighs.

**You can add the flour after adding the bay leaf & thyme when the onions and mushrooms cook down, or make a paste with 1 1/2 tbsp of butter like I did in the video.
