Sweet, sour, and savory — there's a reason this dish is universally loved! This recipe is one I adapted from a house where I ate on my first trip to Manila. Filipino food is so special, and I just adore it. I love the vibrant and diverse flavors, blending sweet, sour, and savory tastes in a single dish. I love its pre-colonial treasures and what the Spanish brought to that food as well. I love the bold and aromatic spices such as garlic, onions, ginger, and the Philippines’ own fish sauce, known as patis. I love the wide variety of ingredients from tropical fruits to the abundance of seafood, pork, and rice dishes.
