INGREDIENTS:
* 6 Cleaned chicken leg quarters.
* Marinate chicken with 1 tsp each of the following ingredients: crushed fennel seeds, granulated garlic, granulated onion, crushed white pepper, dry chili flakes, oregano smoked paprika, curry powder, chicken bouillon, salt, crushed black pepper. 2 tablespoons melted butter, juice of 1/2 lime/lemon.
* Loosely fill 4 sliced large onions on top of marinating chicken and cover with a plastic wrap. Marinate for at least four hours in the fridge.
* Separate sliced onions into a wok, and Line chicken leg quarters on a greased roasting pan. Baked chicken leg quarters for 30 minutes at 400°F. Baste chicken with rendered fat and return to oven, then broil for two minutes or till skin is crispy and golden Brown, with a fried appearance.
* Add 2 tablespoons of cooking olive oil to the onions and, begin cooking onions on medium heat staring occasionally until caramelized. Add an optional scotch bonnet chili, splitted open for a chili kick and fragrance.
* In a small bowl, prepare onion Yassa sauce with the following ingredients: 1 teaspoon each of regular mustard and grainy mustard. 1 tablespoon of cooking olive oil, 3 tablespoons of distilled or white vinegar, half a teaspoon of dried mixed herbs, a teaspoon of all purpose seasoning, 1/2 teaspoon curry powder, pinch of salt and crushed black pepper. Stir to combine and pour into caramelized onions, cook for an additional one minute and serve with the chicken.
