Everyone loves the turkey -- tender inside and crispy outside, and it tastes, smells, and looks so good!

Steps and recipe:

1. Choose a young turkey 12 to 15 lb.

Make sure it is thaw,
and start to prepare 2 days before cooking

2.

1/2 cup of pepper
(better bought from Chinese store)

3. 1/2 cup of sea salt
(I bought from Costco)

4. Pour and mix the pepper and salt
together in the pan.

5. Simmer for 6 - 7 minutes
on medium heat
until it starts to smoke.

6. Get a bottle of beer

7. Open the package of the turkey
that is already thaw,
and put it in a big pot.

Wash and rinse
with cold water

8. Pour the beer on your
hand wearing glove, and rub the turkey thoroughly

9. Empty the beer
and water from the pot

10. Rub the pepper and salt
on to the turkey thoroughly
both inside and outside

11. Prepare sliced ginger,
onion, and green onion,
and spread evenly
over the whole turkey

12. Cover the pot,
and put into refrigerator

13. In the morning
of the day of cooking

Get ready honey 2 tablespoon,
baking soda 1 tablespoon,
and vinegar 1/3 cup

14. Pour water into the pot
that contains the turkey,
heat it to boil

15. Add honey, baking soda,
and vinegar into
the water of the pot

Lift the turkey
every 30 seconds
to avoid sticky to the bottom

Pour the boiled water on the the turkey
if the pot is not big enough
and the water does not
cover the turkey

16. Get the turkey out of
the pot carefully
since it is hot

17. Put it on the rack
of the cooking container
to make it dry
for at least 3 hours

18. After the turkey is dry
wrap the wing and leg tips
with aluminum foil

Wrap the entire turkey
with aluminum foil

Pout 5 cups of water
into the cooking container

19. Set oven to roast
preheat to 400 F-degree

And set to cook for
3 hours
at 400 F-degree

20. After 3 hours
Open the foil and
cook another 30 minutes
to make it golden brown
and crisp

21. After 30 minutes,
take it out
and it's ready to serve
Tender inside
and crispy outside
