This butter-egg-milk free version of the red velvet cupcake is utterly soft and moist red cake with a hint of chocolate flavor. It’s a velvety smooth cake and a delicious indulgence which is perfect for any occasions. Frost it with your favorite frosting and add sprinkles to suit the celebration.

You’ll need:
• ¾ cup white sugar
• 1 ½ cup all-purpose flour
• 1 tbsp (unsweetened) cocoa powder (I use dutch-processed)
• 1 tbsp baking powder
• Pinch of salt
• 1 cup (lukewarm) water
• ½ cup vegetable/canola oil
• 1 tsp vanilla extract
• 2 tsp red food coloring (liquid)

Makes 12 delicious cupcakes
