Shopping List:
3-4 lbs turkey wings
2 tbsps olive oil
All-Purpose Seasoning (or salt, pepper, garlic, onion powder)
1 tbsp Italian Seasoning
1-2 tsp smoked paprika
1-2 tsp red pepper flakes
1 packet sazon
2 tsp dried thyme
celery salt to taste
1/2 tsp cayenne pepper
3 cloves garlic
Roasting Bed:
Celery, Carrots, Onion, Bell Pepper,
1 Lemon
Rosemary and Thyme
Oil
salt and pepper
Gravy:
3 tbsps butter
1/4 - 1/2 cup pan drippings
4-5 cups chicken broth/stock
1/3 cup heavy cream
1/2 tsp browning
1-2 tsp worcestershire sauce
1/3 cup all purpose flour
salt, pepper, garlic, onion powder

Directions:
Preheat oven to 325. Clean and dry turkey wings. Coat in a light layer of olive oil and then season to taste. Prep veggies/herbs for your roasting bed and lay them into your casserole dish or foil pan. Coat in oil and salt and pepper and then arrange the turkey wings in an even layer on top. Cover and place in a 325 degree oven for 90 minutes. Remove from the oven and uncover and place in a 375 degree oven for 1 hour. remove and strain pan drippings for gravy.

Make the gravy by adding butter and the pan drippings to a sauce pot. Add all purpose flour and whisk to combine. Cook for 3-4 minutes and then add chicken stock. Bring to a boil and then reduce to a simmer. Add heavy cream and mix to combine. Darken the gravy to your preference with the Browning and worcestershire sauce. Once gravy is thick enough to coat the back of a spoon, season to taste and pour oven turkey wings, reserving enough for plating. Place back into the oven for an additional 1 - 1 1/2 hours or until fork tender.
