Sweet potato chia pudding:
1 large sweet potato, previously baked (or 2 small)
2 cups soy milk (or any plant milk of choice)
1/3 cup chia seeds
2-4 TBL maple syrup (or molasses)
1 tsp. pumpkin pie spice
Pinch of vanilla powder & salt (optional)
