From the Isaan plateau to the Malay peninsula, from breakfast time to late at night, in Thailand, fried chicken is everywhere. It's everyone's favorite comfort food and here- you can find it in old family recipes, fast food stands, and from creative modern chefs.

This week, we’ll examine the traditions of the many different recipes, the iconic fried chicken dishes, and the incredible history of the dish that first begins- of all places- in Thailand, where the ancestors of today’s chickens were first domesticated more than 8000 years ago.
