ingredients
1 pork shank, about 2 lbs
1 large onion, diced
2 stalks celery, diced
3 cloves garlic, minced
1 tsp black pepper
1 tsp salt
1/4 cup apple cider vinegar
2 tbsp brown sugar
1/2 tsp red pepper flakes
2 lbs collard greens, stemmed and chopped
4 cups water

steps
1. Thoroughly wash fresh greens with cold water.
2. Add pork shank and 4 cups of water into a pot. Bring to a simmer and cook for 30 minutes.
3. Add collard greens, cover with water, boil.
4. Season with spices, vinegar, sugar.
5. Simmer for 2 hours, shred pork, serve hot.
