It's hard to beat this Macaroni Salad, it is way high on my list of favorites. I love that's it's easy and full of flavor, lightly sweet and savory and satisfying. You can exchange some of the ingredients in this salad for your favorite too if you wish. My mama made this Macaroni salad often when I was growing up and I've changed it up a little throughout the years until it was just perfect. Not everyone enjoys a little sweet in their Macaroni salad, so you can make your own adjustments and you can add also add peas, carrots, ham or cheese if you wish and it'll be a winner I'm sure. INGREDIENTS ______________
1 Lb. Elbow Macaroni
1 Tbsp Salt (for boiling)
1 1/4 C. Mayonnaise
3/4 C. Sour Cream
1 1/2 Tbsp Apple Cider Vinegar
1/3 C. Sweet Gherkin juice
2 1/2 Tbsp Sugar
3 tsp Yellow Mustard
1/2 tsp Salt or as needed
3/4 tsp Black Pepper
3 Xtra Large Boiled eggs (chopped)
3/4 C. Finely diced Red Bell Pepper
3 /4 C. Finely Sliced Celery
3 /4 C. Finely chopped Sweet Gherkins (pickles)
1/2 C. Finely Chopped Red Onions
1-2 Tbsp Chopped Chives

● TIPS
Soak Red Onions in cold water for 15 minutes to soften onion flavor
● Always keep Macaroni Salad refrigerated
