YOU GUYS this cheese feels like it fell from the heavens, it actually came from Kind Academy UK. This vegan cheese is the quickest, meltiest, easiest, recipe for vegan mozzarella that I have ever found. SUPER beginner friendly, it actually gives me hope that more people might try making their own vegan cheese. My additions to her base recipe (still needs some perfecting but this is a start):
2 tbsp nutritional yeast
¼ teaspoon organic sugar
¾ teaspoon kosher salt, plus more to taste
½ teaspoon rice wine vinegar (or 1/4 tsp lactic acid)
