I call these "spontaneous stews" because I don't work from a recipe. I just toss the ingredients into a pot and cook them. Using store-bought broth and frozen mixed vegetables makes this meal easy to prepare in a short time. And I really love this stew. It's not only healthy for my type 2 diabetes, it also tastes delicious.
