Dali Bora (lentil fritters)

Ingredients
200 g dried red split lentils
1 onion, finely sliced
10 g parsley, chopped
salt, paprika, pull pepper, turmeric
vegetable oil, for frying
Yogurt or sweet chilli sauce for dipping (optional)

Method
Soak the lentils in water for at least 1 hour prior to use; they will expand in size
Wash them well until the water runs clear
Drain the excess water from the lentils and whizz in a blender until smooth
If you like a crunchier texture, don’t blitz the lentils too finely
Transfer to a mixing bowl with the onion and the other ingredients
Add oil to a deep pan, then place it over medium-high heat
Fry tablespoons of the lentil mixture in batches, for 3-4 mins, until golden on the outside and fluffy on the inside
Transfer to a plate lined with kitchen paper
Enjoy with yogurt or sweet chilli sauce for dipping
