The Hot Brown is a dish that on the menu at nearly every restaurant in Louisville, KY. It was created at the Brown Hotel back in the 1920s.

Here is the official recipe from the Brown Hotel and how to prepare it.

The World Famous Hot Brown
makes 4 Hot Browns

1 stick of Butter
1/2 cup of Flour
4 cups Heavy Cream
1 cup Pecorino Romano Cheese
Pinch of Nutmeg
Salt and Pepper to taste
Sliced Turkey Breast
8 slices of Texas Toast (crust trimmed)
8 slices of Bacon
Sliced tomatoes
Paprika

In a large saucepan, melt butter and slowly whisk in flour until combined into a roux. Cook the roux for two minutes over medium low heat, stirring frequently. Do not let the roux darken. Slowly whisk in heavy cream and cook until the mixture begins to bubble. Remove from heat and add in the Pecorino Romano, stirring until the sauce is smooth. Add nutmeg, and salt and pepper to taste.

For each Hot Brown, place tow slices of toast with the crusts off in an oven safe dish -- one slice is cut in half on the diagonal to make two triangles -- then cover with turkey. Take two slices of tomatoes and the toast points and arrange them along the base of the turkey. Pour enough sauce to completely cover the dish. Sprinkle with extra Pecorino Romano. Place the dish under a broiler until cheese begins to brown and bubble. Remove from broiler, cross two pieces of bacon on top and sprinkle with paprika. Serve immediately.
