This Easy One-Pot Lemon Garlic Pasta is your answer for those nights when you come home from work hungry and tired. You only need a few ingredients, it comes together quickly, and it's so delicious! Best of all, because it's made all in one pot, there's not a lot of clean up. Read on for the recipe.

One-Pot Lemon Garlic Pasta

1 lb. pasta of your choice
1 Tbsp. butter
3 garlic cloves, minced
1 cup ricotta cheese
1 cup grated parmesan cheese
zest & juice of 1 large lemon (approx. 1 Tbsp. lemon zest & 1/4 cup lemon juice)
salt & pepper to taste

*additional lemon zest or parsley can be used for garnish. You can also add chicken, shrimp, sausage or your favorite protein to it.

Bring salted water to a boil in a large pot and cook pasta according to package directions. Reserve a cup to a cup and a half of the pasta water and set it aside. Drain remaining liquid from cooked pasta and set pasta aside. Return the same pot to the stovetop and over medium high heat melt the butter and sauté the minced garlic for one to two minutes. Add ricotta, parmesan cheese, lemon zest, lemon juice, salt and pepper and whisk or stir to combine. Add in reserved pasta water a little at a time, until you achieve your preferred sauce consistency. Return cooked pasta into pot and mix until pasta is fully coated in lemon garlic sauce. Add more pasta water if necessary. Remove from stovetop and enjoy while hot.
