WRITTEN RECIPE FOR BASIC CHICKEN SALAD
* 1 pound chicken breast or chicken tenders
* 1/2 cup Mayonnaise
* 1/4 cup Salad Dressing (Miracle Whip) *OR substitute an extra 1/4 cup Mayonnaise
* 2 cups diced celery
* 2 Tablespoons minced onion
**OPTIONAL ADD-INS
* *CHOPPED HARDBOILED EGGS
* *PICKLE RELISH (Sweet or Dill)
** GRAPES-Sliced
** PECANS
You can also use Rotisserie Chicken diced or shredded/chopped.
I poach my chicken breast. I add 2 cups water to a saucepan and add 1/2 teaspoon salt. Add skinless/boneless chicken breast and bring to a slow simmer. I cover the skillet and cook 5 minutes and turn off the heat. Allow to cool. Dice chicken and finish the recipe above.
Refrigerate the chicken salad until ready to serve.
Serve on a croissant, toasted English muffin, sandwich bread or just eat it plain on a base of shredded lettuce.
