INGREDIENTS:


Season the Chicken
----------------------------------

2 lb Whole Chicken, backbone removed

1 tbsp Olive oil

2 1/2 tbsps Jamaica Valley Chicken Seasoning

2 -  3 tbsps Fresh blended seasoning (   • JAMAICAN GREEN SEASONING || JERENESEA...  )

6 - 8 Allspice berries crushed

A few drops of Browning

Salt to taste (optional depending on saltiness of the Seasoning)

Black pepper to taste


Gravy:
----------
1 tbsp Vegetable oil

1/2 an Onion, chopped

3 cloves Garlic, diced

1 - 2 tsps minced Ginger

2 stalks scallion, chopped

3 or more sprigs Fresh Thyme

4 - 6 Allspice berries

1/4 cup Ketchup

Chicken seasoning and black pepper to taste

1 - 2 tbsps Soy Sauce

1/4 cup or more Jamaica Valley Sweet Pimento Ketchup (You may use another sauce in it’s place if you dont have it)

Honey to taste

Browning as desired


Cooking time used:
-----------------------------------------
350F

20 minutes in oven then baste
15 minutes then baste
15 minutes then baste
15 minutes and final basting with gravy

Check the thickest part of breast and thigh for internal temperature of 165F to ensure doneness.
