Basic Bagel Recipe for Bread Machine

1 1/8 cup Water (lukewarm)
3 cups Bread Flour
3 1/3 Tbsp Brown Sugar
1 tsp Salt
3 1/4 tsp Active Dry Yeast
Add all ingredients to the bread machine pan and select the dough cycle. (You can remove the dough from the machine after the first knead - 20-30 minutes or allow to complete a longer cycle - approximately 1 hour 40 minutes.
Place dough on floured surface. Divide into 8 parts . Form balls, gently press thumb through center of ball and slowly stretch into bagel shape. While bagels rise, bring 3 quarts water and 1 Tbsp sugar to a rapid boil in a large sauce pan. Using a slotted spoon, drop 2-3 bagels into rapidly boiling water. Boil on each side for 1 1/2 minutes. Remove and cool on rack 1 minute, brush with egg and sprinkle with sesame or poppy seeds if desired. Bake at 400 degrees F on a baking sheet sprinkled with cornmeal, for 15 minutes or until golden.

Irish Soda Bread Recipe for Bread Machine

1 1/8 cup Water (lukewarm)
3 cups (425g) White Bread Flour
1 Tbs Sugar
1 1/2 tsp Salt
2 Tbsp Butter
2 Tbsp Dried Buttermilk
1/4 tsp Baking Soda
1 Tbs Caraway Seeds
1 cup Golden Raisins
2 tsp Active Dry Yeast
Add all ingredients in the order listed to bread pan. Use the regular, rapid or delayed time bake cycles.
