Cooked Wheat Starch 烫熟澄面

* Spinach Juice菠菜汁 185g
* Cooked Wheat Starch烫熟澄面30g

Yellow Dough 黄色面团
* Glutinous Rice Flour糯米粉 200g
* Pumpkin Puree南瓜泥 100g
* Cooked Wheat Starch烫熟澄面30g
* Water清水 100g

Purple Dough 紫色面团
* Glutinous Rice Flour糯米粉 200g
* Steamed Purple Potato 蒸熟紫薯 100g
* Cooked Wheat Starch烫熟澄面30g
* Water清水 180g

Green Pea Filling豌蓉馅
* Frozen Green Pea豌豆 450g
* Water水200g
* Cooking Oil色拉油 40g
* Salt盐5g

Mung Bean Filling 清香绿豆馅
* Peeled Mung Beans 去皮绿豆250g
* White Sugar白砂糖 50g
* Heavy Whipping Cream淡奶油 100g
(can be substituted with milk 可用牛奶代替)

Golden Bean Pork Floss Filling金砂肉松馅
* Mung Bean Filling绿豆馅 250g
* Salted Egg Yolk咸蛋黄 150g
* Pork Floss 肉松100g

Pork Vege Filling荠菜鲜肉馅
*Grounded Pork鲜绞肉 450g
*Shepherd’s Purse荠菜(飞水挤干后重量) 200g
* Salt盐10g
* White Sugar糖10g
* Light Soy Sauce生抽25g
* White Pepper白胡椒1g (1/4 tsp)
* Ginger Green Onion Water葱姜水 70g

Black Sugar Peanuts Filling古早黑糖花生馅
* Black sugar黑糖60g
* Toasted Peanuts烤熟花生 150g
* Toasted Sesames烤熟芝麻 50g

Red Bean Paste经典豆沙馅
* Red Bean红豆250g
* Cooking Oil色拉油 80g
* White Sugar白砂糖100g

制作步骤:
1. 首先把内馅按照视频中的步骤做好分割好, 冷藏增加馅料的硬度。
2. 制作青团面团的时候, 先把烫熟澄面与糯米粉混合 加入水以及其他湿性材料混合揉制成软硬适中的面团。 采用视频中的开窝检查的办法来判断面团的干湿程度。
3. 包裹内馅, 开水上锅, 蒸制10分钟, 中途开盖透气一次, 具体见视频。
4. 趁热刷油包上保鲜膜, 室温内2天吃完或者速冻保存。

小贴士:
* 青团出炉要立体透亮才好看, 关键就是面团要软硬度合适。
* 馅料含水量不要太大, 否则容易塌陷。
* 蒸制时间不要过长, 否则面团膨胀过度, 出炉就会塌陷。
* 蒸制时间要根据青团的大小进行调整。
