I added a twist to the famous Brazo De Mercedez! I made Ube Brazo de Mercedez Cupcakes today- and it's sooo good!! 😍😍😍 Pwede nyo sya pang-benta and this is something different! The filling is a combination of Ube Halaya, egg yolks, ube extract and sweetened condensed milk. I didn't add vanilla because I think the ube extract is enough. 😊

INGREDIENTS (makes 8 cupcakes)
Meringue:
5 room temperature egg whites
1/2 cup granulated sugar
1/2 tsp ube extract
1/4 tsp cream of tartar

Filling:
5 egg yolks
1/2 can of regular size condensed milk
1/2 tsp ube extract
1/4 cup ube halaya
