Bonjour everyone! I’m going to show you the basic way to prepare Haitian Epis, which just means spices. This is the mixture we traditionally use in Haitian culture as the base for our recipes including our meats, rices and vegetables.

Basic Ingredients:

Yellow, Green, & Orange Pepper
Bright Green Bell Pepper
Scotch Bonnet Pepper
Garlic Cloves (about 3 heads)
Fresh Parsley
Fresh Scallions
Leeks
Celery
Lemon
Lime

Seasonings:
Olive Oil (you can use any oil)
Paprika ( 1/2 tablespoon)
Turmeric (1/2 tablespoon)
Seasoned Salt (1 teaspoon)
Sour Orange (2 ounces)
