You'll Need (for 6 portions):

- 6 slices bacon
- 1 tbsp barbecue sauce
- 3 baked potatoes
- 1/2 cup yogurt
- 2 tbsp chives, chopped
- 3 1/2 oz cheddar, grated
- salt and pepper
- 1 3/4 oz mozzarella, grated

Here's How:

1. Coat the bacon strops with barbecue sauce, before you fry them until crispy on both sides.

2. Bake the potatoes in an oven at 390°F for 45 minutes. Once they have cooled, cut them in half and remove the soft insides, without damaging the skins.

3. Mash and mix the potato insides with the yogurt, chives, and cheddar. Season the mixture with salt and pepper, tear or chop the bacon into small pieces then add that too.

4. Fill the hollowed-out potato skins with the mixture, place them in a baking tray and sprinkle mozzarella on top. Then bake the potatoes in the oven for another 15 minutes at 350°F for 15 minutes.
