Brownies is one of my favorite snacks to bake. That’s why I always try different recipe variations to know the best combination and what gives the best result. I have tried dark chocolate, semi- sweet, bittersweet chocolate and cocoa powder in different combination.

Here I want to share you my favorite and the best recipe that I came up with.

With this brownies recipe, I used a combination of dark chocolate (70%) and milk chocolate. I love the deep, intense chocolate flavor they pack when used together. Not to sweet and doesn’t taste bitter. Use good quality of chocolate. I recommend using bar chocolate that you'd want to eat on its own. The better quality chocolate you use, the better your baked goods will taste.

I reduced the sugar quantity as milk chocolate is already sweet for my taste. I also added cocoa powder, and espresso granules to bump up the chocolate flavor. And I used 100% butter instead of adding oil as I find the brownies mixed with oil too dense and mushy. The butter enhances flavor too. And adding small amount of baking powder will make the brownies light and not too dense.

I used 8x8 inches pan but you can use a larger pan, the brownies will be thinner and you may want to reduce the baking time by 5-10 minutes. Just keep an eye on the doneness of the brownies and use the visual and toothpick test as your guide. Start testing for doneness after 20 minutes of baking, when the toothpick comes out with a moist crumbs clinging it’s done, but if you see wet batter, keep baking.

Perfectly baked brownies will look a little underbaked in the center. The brownies will continue to cook as cools down. So when the outer edge looks a little dry and the middle looks slightly underdone, pull them out of the oven. It’s better to have extra fudgy side than have them turn out overbaked and dry.

285g unsalted butter - 82% fat
175g dark chocolate - 70% + 100g
175g milk chocolate
75g unsweetened cocoa powder
1 tbsp espresso granules or powder (optional)
135g granulated sugar
135g brown sugar
180g all purpose flour
4 large eggs
1 tsp baking powder
1 tsp salt
2 tsp vanilla extract
