Hey guys! In this video, we make Hainan Chicken rice which is actually a simple dish in itself. In the minimalist meal prep series, we look at maximizing both health and cost per meal which can help us save more money and get closer to our fitness goals. Try out our simple Hainan chicken recipe. This goes down as one of my favorite recipes on this channel!

Ingredients:
Green Onions: $.99
Cucumber: $.99
White Rice: $1.99
Ginger: $.67
Garlic: $.67
Sesame Oil: $2.69
Whole Chicken: $.491

Recipe:
1. Remove fat and giblets from the chicken and season heavily with salt. Stuff the cavity with green onions, garlic, and ginger
2. Boil the whole chicken for 20-25 minutes or until the thickest part of the meat (the breast) registers 165F
3. Take chicken out, pat it dry, and pour over sesame oil. Evenly coat the oil around the chicken and put it in the broiler to crisp up the skin. Put under broiler for 2-3 minutes.
4. Save some of the broth from cooking the chicken
5. Make the rice: into a pan add in 1 tbsp of sesame oil, the chicken fat, and stir fry diced ginger and garlic. Set aside to cool.
6. Add in the oil, fat, ginger, and garlic mixture to rice and use chicken broth as the liquid.
7. Plate up with sliced cucumbers and enjoy!
