Dan O'Boyle completes his walkthrough of the new ventilation system installed at Roost Bistro by visiting the kitchen. The new system has been a significant improvement. The ventilation keeps the kitchen smoke free as well as full of fresh air from outside. The ductwork going through the entire building has been enclosed so it is not visible in the rooms but can be easily cleaned through each access panel.
