This wonderful creamy pasta is a week night favorite at our house! If you are a pasta and mushroom lover, you've come to the right place. This one pot creamy vegan pasta is decedent and comforting. And the best part, the ingredients are super convenient and easy to reach right from our pantry. This dish feels like dairy, but it is completely vegan and your can totally use the pasta you prefer here. I hope you're going to enjoy it as much as we do.

Ingredients:

2 tbsp olive oil
5 garlic cloves, sliced
1 box mushrooms of choice, cut into 4
1 can coconut cream
1 box pasta (340 grams)
2 tbsp nutritional yeasts
4 cups boiling water
optional 1/2 cup vegan mozzarella
salt and pepper to taste
1 tbsp garlic powder


Instructions:

1). Heat up a pot with 2 tbsp oil. Add the sliced garlic, sprinkle a pinch of salt and sauté until golden.
2). Add the cut mushrooms and season with salt as well, and mix every few minutes, until golden brown.
3). Add the coconut cream and it's water, add the pasta, season to taste with salt and pepper, along with the garlic powder, nutritional yeasts, and vegan mozzarella.
4). Add the boiling water, mix well, and bring to a boil.
5). Cover, and simmer on medium-low for 20-25 minutes, mixing frequently so the pasta cooks evenly.
6) Serve immediately with some dry chili flakes or extra cheese.
