RECIPE: Here are the basics of how I made this pot of soup: I sauteed slices of celery, leeks, red onions and garlic in some olive oil. when they became translucent, I added a bag of frozen mixed vegetables and a bag of frozen Lima beans. Then I added two cans of Campbells tomato soup and added water to nearly fill the pot and about a quarter cup of pine nuts. When the veggies became nearly cooked, I added a few handfuls of pasta and let the pot simmer on low. When the pasta was semi cooked, I turned off the heat, stirred it and added several tablespoons of white miso, mixing it in without cooking it further. That's it. Let the pot sit for a few more minutes til the pasta finishes. You can always add any additional veggies that you have on hand, if you would like.
