2 tbsps. unsalted butter
4 tbsps. chopped parsley
15 oz. ricotta cheese
1 1/2 cup parmesan cheese
1 1/2 cup Colby Jack and yellow cheddar
1/2 cup chopped onion
1 cup heavy cream
4 oz. cream cheese
