Holly’s Instant Pot Hard Boiled Eggs:
Raw eggs (2-3 weeks past grocery store expiration date works best!). You can cook 1 or up to 12 eggs at a time (maybe more, but I have not tried more than 12 yet). Open the Instant Pot and put the rack (which should come with every Instant Pot) inside the pot, place all your eggs in the pot, and pour 1.5 cups of water over eggs. Close up Instant Pot, and lock lid in place. Put the vent to sealing. Turn on Instant Pot by pushing the Pressure Cooker button (make sure it’s on Low Pressure and Keep Warm button is on). Manually adjust the time to 6 minutes. Let it cook on its own until it goes back to zero. Then let it naturally release for 5 minutes. After 5 minutes, open vent on top and let pressure (steam) release until the red button on the top goes down. Once red button is down you can open the lid and take eggs out of Instant Pot, placing them into an ice bath (large bowl with ice water). Let the eggs rest in the ice bath for 10 minutes. After 10 minutes in the ice bath your eggs are done - ready to peel off their shells and enjoy!
