Super easy recipe to make soft and juicy Coconut Jaggery Laddu at home. This coconut laddu is known as Kobbari Louz or Kobbari Undalu in Telugu. While growing up this used to be one of my favorite sweet snacks to munch on. Kids and adults alike, everyone is going to love these soft laddus that just melt away in your mouth. Store them in an airtight container and they stay fresh for a few days. Enjoy!

Ingredients:
• Fresh Coconut (grated) – 2 Cups
• Jaggery Powder – 1 and ¼ Cups
• Cashews – 12
• Cardamom Powder – ½ tsp
• Ghee – 1 tbsp

Steps:
1. Place a pan on medium heat and add ghee to it.
2. Once ghee melts, add cashews and sauté for a few seconds until they develop a beautiful golden color. Do not over color cashews.
3. Remove cashews from the oil and keep aside.
4. Add grated fresh coconut to the same pan and roast in ghee for at least 5 minutes.
5. Next add jaggery powder and mix well with coconut.
6. Add a couple tbsps. of water to help the jaggery melt and incorporate well with coconut.
7. Now continue to cook the coconut jaggery mixture for a few minutes, until the jaggery melts and the mixture becomes slightly sticky. Eventually the mixture binds and comes together. Note: you can tell if the mixture is ready or not by taking a little bit of mixture into palms and pressing it to form a laddu. If it sticks together then the mixture has cooked to a right consistency. But be careful while checking the mixture, as it will be very hot.
8. Add cardamom powder at this point and give it a good mix.
9. Turn the heat off and transfer the mixture into a plate/separate bowl to cool down for a couple minutes.
10. Once the mixture is lukewarm, take a little bit of the mixture and form into a laddu. Add a piece of fried cashew while forming the laddu.
11. Repeat until all the mixture is formed into laddus. They may feel very soft at this time, but they set and firm up a little bit as they cool down further.
12. Soft and juicy Coconut Jaggery Laddu are ready. They are called Kobbari Louz or Kobbari Undalu in Telugu. They are super delicious and just melt in your mouth. Enjoy!
