Barley moong dosa is a nutritious and gluten-free breakfast option popular in South India. To prepare this dish, barley and moong (whole green gram) are soaked, ground into a smooth batter. The batter is then spread thinly on a hot griddle or tawa to make crispy and flavorful dosas. These dosas are typically served with chutney or sambar.
Barley Moong Dosa is a nutritious and flavorful option, with barley providing FIBER and moong dal offering PROTEIN and essential VITAMINS. Enjoy!

Ingredients:

1/2 cup barley
1/2 cup moong(green gram)
1 tsp methi/fenugreek seeds
1/2 tsp Jeera/ cumin seeds
1 Green chilli
1/2 inch ginger
Salt to taste
1+1/4 cup OR as needed
Oil or ghee for cooking

For toppings:
Onion, carrot, coriander

Instructions:

1. Rinse the barley, moong dal, and methi. Soak them in water for at least 8 hours or overnight.
2. Drain the water and grind the mixture into a smooth batter using a grinder or blender. Add salt, jeera, green chilli and ginger.
3. No need to ferment. If you want Ferment the batter for 6-8 hours or overnight.
4. Heat a non-stick pan or cast iron skillet over medium heat. Grease with oil or ghee.
5. Pour a ladle of batter onto the pan and spread evenly to form a circular layer.
6. Add topping of your choice of vegetables
7. Cook for 1-2 minutes, until the edges start to curl and the surface is dry.
8. If you look for more crispy, Flip and cook the other side for another minute.
9. Serve hot with sambar, chutney, or your favorite accompaniments.
